Ingredients:

1/4 cup seasoned rice vinegar
1/4 cup mirin (sweet cooking rice wine)
1/4 cup packed brown sugar
2 teaspoons grated fresh ginger
1 large English cucumber (about 12 oz.), peeled if desired, and thinly sliced
1/4 cup thinly sliced red onion

3 1/2 lb. Whole Chicken

1/4 Cup Chopped Fresh Chives

3 tbsp White or Red Wine Vinegar

2 tbsp Capers

2 tbsp Thyme

Ingredients:

6 organic salad tomatoes
2 white onions
6 pcs shallots
1/2 cup oil, for frying shallots
1/2 cup dry native peanuts
a little peanut or corn oil
fine salt

Procedure:

Wash tomatoes. Slice into 1/2 inch thick wedges.
